    Paula G asks: “I hear a lot about Zinc. Why should I know about it?

    Joe says: Zinc is an essential trace element that is involved in most major metabolic pathways. It is an antioxidant nutrient that provides protection against free radicals, and helps maintain your immune and reproductive systems, skin health, and growth. It has also been known to help decrease the absorption of heavy metals. The recommended dosage of Zinc is anywhere from 10-20mg daily, but check with your doctor for the best dosage for you.

    Recipe of the Month: Zesty White Bean Dip

    With fresh flavors like dill and lemon, this white bean dip is a great protein-packed choice for both snacking solo and entertaining.

    • 3 Cups white beans, cooked
      (1 cup dried beans) 
    • 3 Tbs fresh lemon juice
    • 3 Tbs extra-virgin olive oil
    • 2 Tbs dill, chopped
    • 2 garlic cloves, crushed
    • Finely grated zest of 1 lemon
    • Salt and pepper to taste
    • Paprika and oil for garnish

    1. Puree the beans in a food mill, or mash by hand, in a medium bowl.
    2. Add the lemon juice and zest, oil, dill, garlic, and salt and pepper to taste.
    3. Transfer to a serving bowl and refrigerate until you are ready to serve.
    4. Garnish with a dusting of paprika and drizzle with some extra olive oil.
