Recipe of the Month: Avocado Tomato Eggplant Rounds

Eggplant is chock-full of vitamins and minerals that have been shown to promote digestive and immune health and manage Type 2 Diabetes, high blood pressure, and cholesterol levels. This vegan recipe perfect for when you’re craving something a little heartier than the classic avocado toast.
  • 1 small eggplant, sliced
  • 1 avocado, mashed
  • 1 tomato, sliced
  • ½ tsp garlic powder
  • ¼ tsp turmeric
  • dash of cayenne pepper
  • salt and pepper to taste
  • Optional: nutritional yeast

Preheat oven to 350°. Place eggplant rounds on baking sheet covered with parchment and bake for 12-20 min until they brown a little. While they are baking, mix the seasonings into the avocado mash. Let eggplants to cool then top with the avocado mash and tomato (with a sprinkle of nutritional yeast for some extra protein, vitamins, minerals and antioxidants). Enjoy!
